Cheesy Chicken & Rice Casserole

Absolutely delicious.
✏️ Ingredients
* 3–4 boneless, skinless chicken breasts
* 2 cups uncooked white rice
* 1 can (10 oz / 284 mL) cream of chicken soup
* 2 cups chicken broth
* 1 cup frozen mixed vegetables
* 2 tbsp butter
* 1 tsp garlic powder
* 1 tsp onion powder
* ½ tsp paprika
* Salt & pepper
* 1½–2 cups shredded cheddar cheese
👩🍳 Directions
1. Preheat oven to 375°F.
2. Grease a 9×13 baking dish.
3. Add to the dish:
* Uncooked rice
* Cream of chicken soup
* Chicken broth
* Frozen vegetables
* Butter
* Garlic powder
* Onion powder
* Paprika
* A little salt & pepper
Stir everything together really well.
4. Cut your chicken into bite-sized pieces and spread it evenly over the rice mixture.
5. Cover TIGHTLY with aluminum foil. This is important so the rice has enough steam to cook.
6. Bake for 45–55 minutes.
Check that the rice is tender and the chicken has reached 165°F.
7. Remove the foil and cover the top with shredded cheese. 🧀
Bake another 5–10 minutes, until the cheese is melted and bubbly.
8. Let it sit for 5–10 minutes before serving.
//One important thing
Because you’re using uncooked rice, make sure the casserole stays covered for the first 45–55 minutes. If you check it and the rice is still firm but the liquid is mostly absorbed, add a small splash of broth, cover it back up, and give it another 10–15 minutes.
